Glutenfri vegan pizzabunn

Fy søren så mange vanskelige pizzabunn oppskrifter det er der ute, og akkurat i dag så gidder jeg ikke bruke all verdens tid på pizzabaking. Har egentlig ikke forsøkt meg på glutenfri vegan pizzabunn før, men en gang må jo være den første. Med tanke på at jeg jobber med pizza så har jeg hatt en del heftige pizza-munchies i det siste. Men hjemmebakt er jo det beste uansett.

Så jeg brukte den oppskriften her som er bassert på en eller annen fra NRK, med litt googling så finner man lett frem til den etter å ha lest den tilpassede. Har den til heving nå, puttet i litt krydder i bunnen og litt anna greier bare for å teste. Eksprimentere heter det vel.

Men da blir det i hvertfall pizza kveld igjen…

Tofu! and cornbread’n stuff

yesterday I made vegan cornbread. Turned out great. Best eaten fresh out of thee oven. Had munchies for cornbread this morning, and decided to toast it. Works great. It’s easy to make gluten free also, you just change some of the meal in it.

I always, almost get a heart attack when on that page. Cravings for fooooooooooood!

Testet toros glutenfri melmix i dag. Den lyse. Helt grusom deig, slimete. Man må bruke mye mere mel enn det som er i posen, så jeg fyllte på med jyttemel. Brukte masse solsikke og linfrøkjerner i tillegg. Bare for å sprite opp melblandingen noe. Slik er det på søndager når du har glemt å kjøpe mel til brødbaking før helgen.

Gleder meg til å smake de, håper de blir bra! Eventuellt bedre enn de ser ut for øyeblikket..

Vegan GF eplekake

2,5 dl jyttemjøl

2dl sukker

2ts bakepulver

2ts vaniljesukker

1/2ts salt

2dl soyamelk

50g vegansk margarin

2 store epler. jeg brukte her litt mindre, synes det ble mye.

kanel og bruntsukker

Bland sammen alt det tørre. Smelt margarinen. Tilsett soyamelken i margarinen. Hell det over de tørre ingredientsene.

Bland inn eple båter, spar litt til pyntpå toppen.

Hell deigen i en form, pynt med eple, brunt sukker og kanel på toppen.

Stekes midt i ovnen på 180 grader i ca 45 minutter.

Kan med fordel spises med litt vegan is.

Fritt etter hukommelse fra Blitz kokeboka, bare tilpasset den glutenfri…

Edit: Min brukte hele to time i ovnen. Men den ble helt fantastisk da den ga seg ende over å ble stekt..

Easy dinner

So, today I decided to use the cocnut milk my boyfriend brought home a week ago, it’s been standing on the shelf yelling my name. but I haven’t found a use for it. So today, rice noodles, quarn and veggies.

Very easy:

Boil water and follow the description on your rice noodle package.

Fry quorn

Fry veggies, I used onion,  carrots, peppers. Spice the veggies with salt, pepper.

When everything are ready, mix in pan and fry a bit more.

Mix in coconut milk, and some sweat and sour sauce(very very little of the last one)

 

 

 

This weeks bread

Used the same recipe as the last post with the Finax flour mix. Used sunflower seeds, pumpkin seeds, flax seeds, honey, vegan butter and rice milk to.

This time my bread looked good, and tasted fantastic!

Potatoburgers

Potatoes (raw, yesterdays leftovers or frozen)

Salt, pepper and other types of spices or herbs.

Rip the raw potatoes og squize out the water. Mash the other types.

Spice it, then shape the burgers. Fry them in oil in a pan.

Works well on bread, or whatever you like.

 

 

My first home made bread

a little proud I am! My first home made gluten free vegan bread.

I used Finax’s gluten free flour mix, followed the very easy recipe, added a bunch of seeds from pumpkins etc. I have not tasted the result yet, since it’s fresh out of the oven as I am writing.. The flour mix is probably not the heatlthiest but it’s a good way to start. Next time I will use some of the recipes I found through blogs.

There will be no photos, since the bread is very unphotogenic. It’s greyish and yuck. But I guess it tastes good! That’s the point anyway.

This year my blog will be all about gluten free vegan. And other stuff as usual. But my big project will be finding new recipes and ways to feed myself.

 

Starting off the new year with sushi take away and baking bread.
